Coconut, is it manna from heaven? According to some, it is.
Our Coconut Chews are tasty morsels of this heavenly manna. We got carried away while making no bake cookies and transformed them into a krispie treat like almost-candy. They turned out slightly crispy, chewy, nutty and very tasty!

Ingredients
Directions
Toasting coconut:
1. Preheat oven to 425 degrees.
2. Spread the sweetened shredded coconut evenly across a large baking sheet.
3. Bake for 12 minutes.
4. Remove from oven. Stir and then re-spread evenly across the baking sheet. It may not look like it is cooking but it needs to soften first before any toasting can begin.
5. Bake for another 8 minutes. Repeat step 4.
6. If needed, repeat step 5 until most of the coconut is a golden brown.
7. Remove from oven. Cool completely.
Toasting Oats
1. For a nuttier flavor, use toasted oats. To toast, spread oats on the same baking sheet as the coconut.
2. Bake for about 10 minutes, stirring occasionally.
4. Remove from heat. Cool.
Coconut Chews
1. In a large saucepan, mix together the sugar, butter and coconut milk.
2. Bring to a boil. Boil 2 minutes.
5. Remove from heat. Add pudding mix, crispy rice cereal, oats, toasted coconut and coconut extract.
6. Let stand 5 minutes.
7. Drop by teaspoon onto waxed paper or aluminum foil.
8. Allow to cool completely and enjoy.
9. If there are any leftover, store in airtight container.
Our inspiration began with Aunt Peg's but we got quite carried with our creativity so it is very loosely adapted from that recipe.
